What is a burrito?
A burrito is a flour tortilla wrapped around a variety of fillings, such as shredded chicken, shredded beef, beans & cheese, etc.
What is a taco?
We offer both soft shell and hard shell tacos made from our 100% corn tortillas and various fillings. Hard shell tacos are corn tortillas placed in a form and cooked in vegetable oil until crisp. Tacos are filled with pickled onion, cilantro, cortija, salsa fresca, and your choice of filling, such as shredded beef, chicken, or beans, etc.
What are tostadas?
Tostadas are flat 100% corn tortillas cooked in vegetable oil until crisp. They are served with various toppings such as chicken, beans, beef, or guacamole; each is topped with lettuce, cheese, and tomatoes.
What is an enchilada?
An enchilada is a 100% corn tortilla wrapped around a variety of fillings such as shredded chicken, shredded beef, beans & cheese, etc. The enchilada is then covered with enchilada sauce—a mild, red chile sauce, & cheese. It is then briefly broiled under an open flame.
What is enchilada sauce?
Enchilada sauce is made from a multi-step, extensive recipe including Ancho chiles, as well as our special combination of spices.
What does “Enchilada Style” mean?
Salena’s own method of finish. A burrito is served as if it were an enchilada: covered with mild red chile sauce & cheese and briefly roasted under an open flame.
What is molé sauce?
Molé is, arguably, an old word from the Mexican colonial age meaning simply “sauce.” As legend has it, a Nun, Sor Andrea, in Puebla’s Santo Rosa convent, developed a Molé Poblano sauce in the 1600s that is still popular today. Molé sauces, such as ours, are thick, dark, and complex. The recipes contains vegetables, various dried chiles, nuts & seeds, chocolate, cinnamon, and other spices.
What does “Molé Style” mean?

What is white sauce?
White sauce is a delicious, creamy French sauce to contrast and compliment our more traditional Mexican selections.
What does “White Style” mean?

What is green (or verde) tomatillo sauce?
Tomatillo sauce is made from tomatillos, which are members of the berry family, our special blend of herbs and spices, mixed with pork shoulder pieces.
What is chorizo?
Chorizo sausage is a Mexican ground pork mixture made from an extensive recipe.
What are fajitas?
Fajitas are either ranch cut steak (from the shoulder of the cow), skewered tail-on shrimp, or chicken breast seasoned with our special spices and cooked on an open grill, or any combination thereof. They are served with lettuce, tomatoes, onions, guacamole, sour cream, sautéed peppers and onions, mozzarella cheese, three flour tortillas, Mexican rice, and pinto beans. Some assembly required!
What are chile relleños?
Chile relleños are roasted Poblano peppers stuffed stuffed with cheese, black beans, peppers, and onions, breaded, and fried. Each is finished with a charred tomato sauce, queso fresco, and salsa fresca.
What is a “Super Burrito”?
A super burrito is a standard burrito with an extra portion of filling and lettuce inside, covered with enchilada sauce and cheese, then briefly roasted under an open flame, and finished with lettuce and tomatoes. Served alongside rice, pinto beans, and with sour cream.
