at Salena's my staff and I try to be as helpful as possible.
Over the years we have recognized that certain questions are very common.
Since most of those questions are regarding our menu selections, I have
developed a sort of glossary of terms and dishes that should help.
Of course if you don’t find what you are looking for, feel free to email
me. I will reply and add your
question and answer to the list or come visit the restaurant and ask your
server!
What
is a burrito?
A burrito
is a flour tortilla wrapped around a variety of fillings such as shredded
chicken, shredded beef, bean & cheese, etc.
What
is an enchilada?
An
enchilada is a 100% corn tortilla wrapped around a variety of fillings such as
shredded chicken, shredded beef, bean & cheese, etc. The enchilada is then covered with enchilada sauce, a mild,
red chili sauce, & cheese and briefly roasted under an open flame.
What
is Enchilada Sauce?
Enchilada
sauce is made from multi-step, extensive recipe including Ancho Chiles as well
as our special herbs and spices.
What
is Enchilada Style?
Salena's
own method of finish. A burrito is
covered with a mild red chili sauce & cheese and briefly roasted under an
open flame.
What
is Mole Style?
Salena's
own method of finish. A burrito or
enchilada is covered with mole sauce & cheese and briefly roasted under an
open flame.
What
is Mole Sauce?
Mole is,
arguably, an old word from the Aztec/Spaniard age that means sauce.
As a legend has it, a Nun, Sor Andrea, in Puebla’s Santo Rosa Convent,
developed a Mole Poblano sauce in the 1600’s that is still popular today.
Mole sauces are thick, dark and complex. The recipes contain fruits, vegetables, various dried chilies,
nuts & seeds, chocolate, cinnamon and other spices.
What is Masa?
The Spanish term for fresh dough
that we make from scratch daily for our flour tortillas.
What
are Nachos?
A fried corn tortilla cut in to four
pieces, covered with cheese and briefly roasted under an open flame and served
with Jalapeno peppers.
What
is a Quesadilla?
A corn tortilla dipped in peanut
oil, filled with different cheeses and salsa.
It is folded over, covered with cheese, briefly roasted under an open
flame and finished with a line of salsa. Be
careful, the plate is hot!
What
are Chinitos?
A different version of refried
beans. Cooked in a skillet and
formed into a football shape, Chinitos are finished with different cheeses and
served with chips.
What
is a Guacamole Dip?
An ample serving of our homemade
Guacamole served on a bed of Romaine lettuce with lots of chips and finished
with a sprinkle of cheese and tomatoes.

is a Hole Mole?
An ample serving of Guacamole
surrounded by 20 cheese nacho chips.
What
are Tacos?
We offer both soft-shell and hard
shell tacos made from our corn tortillas with various fillings. Soft-shell tacos are briefly cooked in peanut oil so the taco
is soft and pliable. Hard shell
tacos are corn tortillas placed in a form and cooked in peanut oil until crisp.
What
is Chorizo?
Chorizo is a Mexican pork sausage
mix made from an extensive recipe and cooked to order.
What
are Tostados?
Tostados are flat corn tortillas
cooked in peanut oil until crisp. They
are served with various fillings topped with lettuce and tomatoes on a bed of
Mexican rice.

are Fajitas?
Fajitas are either a skirt steak or
chicken breast seasoned with our special spices and cooked on an open grill.
They are served with a salad, a cheese enchilada, Mexican rice, refried
beans, guacamole, sour cream, two flour tortillas, lettuce and tomatoes
What
is Green (Verde) Sauce?
Tomatilla Sauce is made from
tomatillas, which are green Mexican tomatoes, our special herbs and spices,
mixed with pork tenderloin pieces.
What
is White (Blanco) Sauce?
A delicious, creamy French sauce to
contrast and compliment our Mexican sauces.
What
are Chili Rellenos?
Chili Rellenos are roasted Poblano
peppers stuffed with 3 cheeses and spices, brushed with melted butter, breaded,
and baked then finished with a tomato sauce.
What
is a Super Burrito?
A Super burrito is a standard
burrito with an extra portion of filling and lettuce inside, covered with
enchilada sauce and cheese then briefly roasted under an open flame and finished
with lettuce and tomatoes, served with double portions of rice and sour cream.
